COOKS AROUND TOWN Simple Minestrone Soup

Minestrone soup.
Serves 4.


INGREDIENTS:

4 tbs extra virgin olive oil

100g pancetta

l large onion

4 garlic cloves

3 medium carrots

2 celery sticks

l

1 tin tomatoes

vegetable stock


1 cup of any pasta


Salt and black pepper


METHOD:

Cook the onion and pancetta in a pan for 6 minutes.

Pour in the stock and heat to boiling point. Add salt and pepper.

Add the rest of the stuff.

Simmer for 30 minutes.

Job's a good 'un.
